Lockdown 2.0
It seems much of the world is in and out of lockdown these days. restrictions get lifted and then put back in place. This is becoming the reality of the world we live in during a pandemic before we know if a vaccination can be developed to secure our immunity. I live in Victoria in which we are currently in a stage 3 lockdown which the message is clear: stay home. While lockdown is not where I want to be it's the safest place and is essential to get the second wave we are facing under control.
Lockdown 2.0 does however seem easier than the first lockdown we faced. I feel there are lessons we learnt from the first lockdown that make it easier and also we know it does come to an end eventually!
I thought i would share some tips that I am currently doing to manage lockdown 2.0 which are helping me stay sane at home with 2 small kids.
Few of my favourite easy healthy snacks are:
Tahini balls- these are really easy to make and fun to get kids involved. ingredients- 1/2 cup tahini, 1/2 cup honey, 1/2 cup of dried fruit of your choice, 1/2 cup of coconut, 1/2 cup of raw nuts of your choice chopped up. Combine all ingredients in a bowl and shape into golf ball sizes, roll them in coconut once shaped and refrigerate. They are healthy and perfect for an afternoon sweet treat.
Breakfast oat biscuits-again very easy and my nearly one year old loves them. Ingredients- 1 banana, 1 cup of oats, 1/2 cup of dried fruit of your choice chopped up (I use sultanas so no chopping needed). Combine all ingredients in a bowl and shape into golf ball size balls. put them in the oven at 180 degrees for 15 mins and enjoy.
Spiced nuts-this one is courtesy of the better together cookbook which I love. depending on how big a batch you want to make you can increase the ingredients. 2 cups of raw nuts, 4 springs of rosemary take off the stem, one teaspoons of maple syrup, cayenne pepper mixed in as your desired level of spiciness and salt as desired. Mix all ingredients in a bowl, place nuts on a tray single level in the oven for 30 mins on 180 degrees, turning them every 10 mins.
